Job Summary: The Train Prep Kitchen Supervisor is responsible for the day-to-day operations of the Train Prep department. Responsibilities Fully understand and support Xanterra Mission Statement and Core Values and Culture Pillars. Enforces all Xanterra GC Railway standards, policies, procedures, and environmental standards. Enforces SERV Safe and HACCP food sanitation program for Commissary kitchen. Enforces all Department Standards including Uniform, Hygiene and Food Sanitation. Directs the staff with specific instructions at the beginning of the shift and maintain good morale. Maintains temperature logs on daily basis. Ensures trays for train food is consistent, fresh, and appealing for our guests. Communicates openly and professionally with the Chef, Managers, F & B Director, Train Ops and Warehouse Manager. Teaches and abides by in-house recipes and pars. Recognizes when product is substandard and request through the Commissary Buyer to find another product. Minimizes food waste by only accepting products that is presentable to our guests and reduce back stock to two-three days of short life product. Supervises proper cooling, storing, labeling, and dating of all food products. Ensures all employees are washing hands frequently and thoroughly. Always aware of on duty employee productivity and act accordingly. Communicates call-ins and employees conduct situations via e-mail to all managers. Checks each employee’s side work before they leave and ensure their assigned station is cleaned properly. Ensures all equipment has been cleaned daily including can openers, sinks, drains counter tops, shelves, carts, dishwasher, including sweeping and mopping commissary kitchen floor daily and including surrounding areas. Completes an accurate and consistent monthly food inventory. Places necessary food orders through the Commissary Buyer in a timely manner. Schedules part-time Train Prep employees weekly according to train volume. Other duties as assigned. Qualifications Minimum Qualifications: Must be at least 18 years of age or older. Two years supervisory or lead cook experience in a medium volume kitchen facility Preferred Qualifications: Proven interpersonal skills with ability to communicate with F&B Managers. Having a valid Serv Safe manager food sanitation course & Coconino County Health manager course. Physical Requirements: While performing the duties of this job, the employee is: Constantly standing, walking, twisting, using eye/hand coordination, manual dexterity, handling, wrist motion, bending/ stooping. Frequently carrying, bending, stooping, lifting, pushing, and pulling items weighing up to 10lbs. Occasionally carrying, bending, stooping, lifting, pushing, and pulling items weighing up to 50lbs. Constantly listening, hearing, seeing, and speaking. Will be required to stand and walk for long periods of time on cement floors and to occasionally walk on uneven surfaces.
