Hyatt Regency Cape Town is looking for a Sushi Chef to join our culinary team and prepare delicious plates for our guests.

Sushi Chef responsibilities include handling a wide range of raw fish and other ingredients; managing food stock and working with an attention to detail to fulfill all orders within quality standards.

Key duties, but not limited to:

Create a rich sushi menu with various main ingredients and raw fish (for example, salmon, tuna, unagi)Prepare all types of sushi, including maki, nigiri and sashimi.Select fresh vegetables to make high qualitydishes.Add additional flavours to sushi rolls like ginger, rice vinegar, wasabi and soy sauce.Manage the prepping of food.Coordinate with wait staff to ensure proper cooking, making consideration for special requests and food allergies.Monitoring of food stock and placing of orders as it isneeded.

Requirements and skills:

Experience working as a Sushi Chef or an Asian restaurant.Knowledge of various sushi types and sushi-rolling techniquesAbility to work both fast and accurately.Availability to work during business hours, which will include weekends and evenings.Certification from a culinary school is a plus.
