The primary focus of the Kitchen Manger is to supervise and coordinate activities of culinary and day-to-day operations of the Bullwinkle’s kitchen. Supervise Culinary and other Food and Beverage personnel to ensure economical and timely food service production. Review departmental costs including food, labor, and miscellaneous expenses, and determine the specific corrective action to meet the established goals of the food and beverage department and those of the resort.  Be responsible for team member scheduling, daily attendance recording, inventory control paperwork and any other paperwork as required. Use ServSafe guidelines to maintain sanitation standards for all “back of house” areas and be responsible for all health department inspections and corrective action related to all violations.  Responsible for purchasing, receiving, and storage of food and supplies as needed. Establishing and monitoring par levels throughout the property to maintain proper supply of food and equipment to ensure guest satisfaction.  Adhere to company and departmental policies/procedures and communicate to staff to ensure all are consistently applied. Work shifts will vary based on need; must be flexible with schedule and able to work mornings, nights, weekends, and holidays, with more time being needed during periods of extremely heavy business  Meet with Food and Beverage colleagues and customers to resolve menu inconsistencies or to plan events Qualifications Candidates must be willing to work weekdays, weekends, and holidays as needed. At least 2 years of previous culinary experience is required for this role. Preference will be given to candidates with 2 or more years in a culinary lead role.
