Working as a Senior Executive Chef of Catering Services will allow you the opportunity to work with GREAT people like yourself! The purpose of this job is to lead culinary operations related to catering services insuring on trend, efficient, safe and sanitary food production. You will be responsible for menu development, inventory, purchasing, food cost controls and staff management and development.
Key Responsibilities:
+ Develop high culinary standards for our Catering and Conference Centers, Board and High Level Executive Meals, Training Center and retail dining operations to include buffets, receptions, plated services and specialty events
+ Trains develop and provide inspirational leadership to local culinary team
+ Lead Corporate Social Responsibility, food seasonality, health/wellness and high-quality culinary arts on campus
+ Analyze ongoing performance and trends in the local operation and devises and leads improvements
+ Demonstrate a complete understanding of daily menu items and can explain them to customers accurately
+ Curate updated seasonally driven menus and custom offerings pertaining to guest and client requests
+ Organize workspace and relevant materials, equipment and service orders to facilitate smooth and successful services
+ Communicate clearly to Team members, Managers and Frontline associates
+ Ensure catering presentations are high quality following standards and operating procedures
+ Responsible for all HACCP and Food Safety Sanitation for the department
+ Responsible for Requisition and direct ordering of food and service products as required
+ Attend and participates in weekly BEO meetings and maintains all relative information and service order changes
+ Schedule direct reports and front-line associates with consideration of scheduling needs and high volume assessments
+ Responsible for maintaining sufficient product and staffing levels for seamless operation of the department
Qualifications:
+ Culinary degree preferred or equivalent experience
+ 5 to 7 years of progressive culinary or kitchen management experience in high volume operation
+ Experience with planning and managing catering events from a culinary perspective
+ Experience in buffet design and plate/ platter presentations
+ Strong leadership skills and desire to work with an industry leader
+ Comprehensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation
+ Proficient computer skills (Microsoft Office, Email and the Internet)
+ Ability to communicate (Written & Verbal) on various levels including management, departmental, customer and associate
+ Ability to manage conflict resolution and administer corrective communication as required
+ ServSafe® Certification and NYC Food Handler’s Card, strongly preferred
