Restaurant Manager

Compensation: $54,696 per year

Position Summary

Responsible for efficient and proper operation of various food outlets including, but not limited to Triple Sevens, Deli, Banquets, Bingo Snack Bars, Tiwa, Embers, Floor Beverage Service, etc. Exhibits knowledge of product lines and prices and full awareness of safety and food sanitation laws and regulations. Provides efficient and smooth customer service according to the standards required by the Isleta Resort and Casino.

Isleta Resort and Casino Guest Service Agreement

All Team Members will display 100% commitment to World Class Guest Service through the delivery and maintenance of Guest Service Standards established by the Isleta Resort and Casino.

Aggressively promotes sales and marketing of establishment both in-house and locally for optimum revenues. Maintains open communication among departments to provide a positive and professional attitude to employees and a well-informed staff. Hires, trains, and delegates to subordinates appropriate authority to fulfill assigned duties of the Food and Beverage Staff. Plans specials and promotions Effectively monitors and controls all venue costs. Participates in annual budget forecasting for outlets. Assures departments operate within budgetary guidelines. Ensures an open and welcoming atmosphere that promotes skill enhancement. Greets guests, maintains a friendly and inviting atmosphere, and promotes positive guest relations through prompt, courteous, and efficient service. Enforces department standards, objectives, and policy that are in accordance with the Isleta Resort and Casino’s organizational mission. Ensures that their venue is in excellent condition on an ongoing basis, quickly gets damaged or worn furniture, décor or equipment repaired or replaced. Verifies service equipment is in working order and prepped, as required. Strong knowledge of food, beverage, wines, spirits, service and point of sales. Recommends menu changes and additions through feedback to Executive Chef, Restaurant Chef and Sous Chef on a daily basis. Maintains current awareness of food trends and technology to support efficiency of service, production and product. Maintains appropriate pars for all food and supplies. Enhances guest service experience by interaction with guest, passing feedback on to F&B Director and the Assistant Food and Beverage Director. Assists with pre-opening dining room set, food preparation (as needed) and seating layout. Ensures adequate product availability for forthcoming service. Ensures products are attractively displayed and meet Isleta Resort and Casino standards of presentation and quality. Ensures the highest standards of personal appearance are maintained and all subordinates wear the Isleta Resort and Casino uniforms and are in compliance with the SOP on personal appearance. Acts as an intermediary when customer complaints are presented. Resolves employee complaints and suggestions, when unable to do so, forwards those complaints and suggestions to the F&B Director. Ensures safety and sanitation laws are strictly adhered to, hygiene requirements are implemented and maintained, and any health related problems are reported immediately to the Food and Beverage Director. Attends regular meetings organized by management. Continuously trains staff in all manner of food service skills, including, but not limited to; Table Service, Up-selling, Table Maintenance, Guest Service Skills, POS Skills, knowledge of Food, Wine and Liquor. Ensures that all aspects of the Restaurant or Banquet functions are in compliance with all applicable standards of service as defined for the company and the individual venue. Monitors, observes, and interacts with guests to assure no guest is over served alcoholic beverages. Completes all assigned paperwork including, but not limited to, shift reports, incident reports, perpetual and monthly inventories, and variance reports. Updates all beverage menus and verifies all menu items are available, securing missing items as required. Serves as liaison between clients and operating departments to ensure smooth delivery and a successful event and/or meeting completion. Contacts clients to promote special amenities and extras to enhance their event and/or meeting. Reviews billings prior to submitting for processing. Assists customers with event set-up. Directly serves on site group and catering customers in an active manner relative to logistics of group food and beverage, public meeting space/exhibit hall, ancillary and vendor services, affiliates/exhibitors and related billing processes. Coordinates preventive maintenance schedules with engineering and cleaning departments. Personnel & Administrative Tasks: Monitors performance of subordinates, ensuring adherence to the Isleta Resort and Casino’s policies and procedures. Coordinates and prepares daily schedules for staff. Prepares weekly staffing schedules, edits payroll and accurately completes all required reports. Monitors all staff productivity to include side work replenishment, proper staffing, and proper use of dinnerware and prompt response to service as dictated by service standards. In conjunction with management, trains wait staff. Establishes persons responsible for closing and side duties. Ensures subordinates are working productively at all times.

Accountability and Supervision:

Responsibilities include interviewing and hiring, planning, training, assigning and directing work; appraising performance; rewarding and disciplining; addressing complaints and resolving problems; providing feedback to management as to operating policies and procedures, and suggestions on how to make the Food & Beverage Department run more efficiently and cost-effectively. Supervises food outlet operation and staff for employee dining, short order, fast foods, and deli dining type services; Responsible for the overall direction, coordination, and evaluation of the assigned department.

Education and Experience

High School Diploma or General Education Degree (GED) equivalent required. Associates Degree in Hospitality, Food Service, or related field, preferred.

                  Or equivalent combination of education, experience, and training.

Special Requirements, Licenses, and Certification

Must be able to acquire and maintain Gaming License issued through POIGRA. Must be able to successfully pass a pre-employment drug test and background investigation. Must be flexible with work schedule. Must be willing to work any days/hours as needed or required to meet business needs. Must maintain all Isleta Resort and Casino-wide educational and certification requirements. Must have a New Mexico State Alcoholic Beverage Service Certification. Required. Must acquire POIGRA Alcohol Server License, required. Must possess and maintain Servsafe® Certification, and IHS Food Handlers Certification, required.

Knowledge, Skills, and Abilities

Models coaches and reinforces all Isleta Resort & Casino’s SOP’s. Must have essential experience operating POS (Point of Sale) systems. Promotes outlet success through employee development and a favorable work environment. Ability to listen and understand customer. Able to perform under pressure Strong passion and knowledge for F & B/retail operations, and quest services. Great customer service attitude and a willingness to go the extra mile. Must possess working knowledge of and be able to adhere to all OSHA and HACCP standards and regulations. Anticipate customer needs. Ability to maintain excellent guest service. Working knowledge of Microsoft Office Word and Excel. Ability to recall and describe menu and special selection features to customers POS and Cash Handling skills

Physical Demands and Work Environment

Must be able to lift, move, and place 25 pounds. Must be able to sit, stand, and/or walk for extended periods of time

Working Conditions:

Work is generally performed in, both, a Casino setting with exposure to second-hand smoke and a high noise level, exposure to various lights and sounds and a high paced office setting; possibility of working outdoors in extreme weather conditions such as high levels of heat, cold, winds, rain, hail, and snow. Occasionally may be required to interact with hostile and/or angry guests.
