The Colony Golf & Country Club:
The private, member-owned, Colony Golf & Country Club offers an intimate, luxury club experience, where a total of just 275 Full Golf Members may reserve their tee times 8 days in advance as desired (no Chelsea system), and enjoy golf as it was meant to be, in the company of friends and neighbors. The Club offers something for everyone in an exclusive setting, with outstanding dining service and immaculately kept tennis, fitness, spa, and pool recreation facilities in addition to our pristine Championship golf course.
BASIC SUMMARY:
The F&B Director will be a dynamic, visible and accessible leader for the staff and Members alike. He or she will be responsible for all dining operations and will “set the pace” as an example to all employees in day to day operations. Potential candidates will inherit a developing team and possess all the requisite skills, leadership qualities and personal traits best suited for the club. A friendly, outgoing personality is a must as well as a strong working knowledge of high-volume food and beverage service and management. The goal of the staff is to provide Members with excellent service on a consistent basis; taking care to ensure Member recognition in order to promote maximum usage of the club’s facilities.
The desirable candidate will have a strong sense of loyalty, a strong desire to train and promote from within, and retain tenured staff so long as this is desired by both parties.
This position will oversee the Executive Chef and the Culinary Team, F&B Management, and hourly staff members including supervisory roles. This position works closely with the front of the house staff and the Executive Chef to maintain budget expectations, control waste, and help increase member satisfaction with both events and a la carte service.
POSITION RESPONSIBILITIES:
Direct supervision of the daily dining operations for the Club with the goal of maximizing Member satisfaction and to ensure that the quality of the service as well as food and beverage items served meets or exceeds the standards established by the Club. Develops and executes policies and procedures for all dining operations. Daily interaction with Members and the staff with the goal of ensuring quality service for the Membership. A visible and accessible presence is required in all clubhouse areas with a special emphasis in the dining venues. Weekly BEO Meetings Leads and participates in the orientation and training of all new dining room employees. Conducts timely and meaningful employee training and staff development programs, and continues developing the Lexington Playbook. Implements meaningful “Employee Recognition” programs already in place. Prepare with the assistance of the Managers and Supervisors meaningful annual reviews for all hourly staff and conduct annual reviews for managers and supervisors. Works with the GM in the preparation of annual operations and capital budgets. Reviews daily all pertinent operations reports as to dining activity, labor and revenues; compares actual activity to budget. Directs the beverage inventory process at month end and reports to Controller and GM in timely fashion. Directs the food inventory process at month end and reports to Controller and GM in timely fashion. Assists in the creation of the annual Club Events Calendar. Assists with the coordination and execution of private events. Maintains a safe and pleasant working environment. Maintain appearance, upkeep and cleanliness of all food and beverage equipment and facilities. Inspect to ensure that all safety, sanitation, energy management, preventive maintenance and other standards are consistently met. Communicate monthly training topics and safety meetings to ensure employee safety awareness. Oversee the execution of Opening/Closing Sidework, rooms are left presentable, storages areas are clean and organized, and Required to work nights, weekends, and holidays. Assure that all accident and emergency policies and procedures are consistently followed. Accountable for the proper storage of supplies and inventory. Manage physical inventory of all banquet tables, chairs, linens, décor, and misc. supplies.
EDUCATION/EXPERIENCE/OTHER REQUIREMENTS:
Any combination of education, training or experience that provides the required knowledge, skills, and abilities. A college degree in Hospitality management and/or Culinary Management is desired. At least 3 years of experience in Food & Beverage and Hospitality, preferably at a Country Club, or Resort Strong Knowledge with Club Essentials POS Software is a plus Current Member of the CMAA; Both National and Local Chapter Strong interest in Club Management and being an ambassador for The Colony on the FLCMAA Everglades Chapter and National level Strong ability to lead and motivate the team Ability to effectively present information in one-on-one and small group situations to guests, clients and other associates of the organization Ability to effectively and professionally deal with customers, some of whom may require high levels of patience, tact and diplomacy to defuse anger Ability to achieve positive guest relations and maximize guest satisfaction Improved Presence on Social Media and LinkedIn to show the Club’s Progress and Personal Growth
PHYSICAL DEMANDS – ABILITY TO:
Ability to grasp, lift, carry or transport up to 25 pounds. Ability to stand, walk frequently; reach with hands and arms; stoop, kneel, crouch or crawl. Ability to perform the duties of this job while exposed to outside weather conditions. The noise level in the work environment is usually moderate. Ability to exchange ideas by means of the spoken word accurately, loudly and quickly. Ability to perceive the nature of sounds at a normal speaking level and make fine discriminations in sound. Ability to have visual acuity to determine accuracy, neatness and thoroughness of the work assigned.
