THE JOB:
Bellagio is seeking an Executive Sous Chef to help lead the Convention & Banquets culinary team, delivering world-class dining experiences for large-scale events. This role is ideal for a culinary professional with a strong background in high-volume banquet operations, fine dining techniques, and team leadership. This position requires a balance of hands-on culinary execution and strategic administrative management. You will work alongside the Executive Chef to ensure flawless execution of newly developed menus, elevate staff training, and drive operational efficiency while maintaining the high standards of Bellagio’s ultra-luxury hospitality experience.
THE DAY-TO-DAY:
Oversee daily kitchen operations, ensuring seamless execution of large-scale banquet events.
Lead and mentor a team of Sous Chefs and Cooks, focusing on skill development, efficiency, and teamwork.
Maintain menu consistency and quality, assisting with recipe execution, food preparation, and plating for high-profile events.
Manage inventory, scheduling, cost controls, and vendor relations to ensure smooth operations.
Maintain a balance of hands-on kitchen leadership and administrative duties, including training, scheduling, and costing.
Assist with menu innovation and new dish execution, working closely with the Executive Chef to refine offerings and elevate the guest experience.
Drive staff engagement and development, creating a work environment that fosters collaboration and excellence.
THE IDEAL CANDIDATE:
At least 21 years of age or older.
Bachelor's degree or equivalent experience and 2+ years of prior relevant experience.
2+ Years of prior relevant experience in high-volume production kitchen.
Previous experience managing employees under a collective bargaining agreement.
Previous experience working in a luxury or fine‐dining restaurant.
Able to lead and mentor a team.
