Position Summary:
This position is responsible for overseeing the pastry shop along with the day-to-day activities of running the Mohegan Sun culinary operations.
Primary Duties and Responsibilities: includes but not limited to:
+ Hires, trains, counsels, evaluates and schedules the pastry staff
+ Supervises food preparation, quality and cost of products
+ Works with the Pastry Chef in developing concepts and products
+ Assists the Executive Chef in the yearly preparation of both operating and capital budgets
+ Helps oversees the entire Mohegan Sun culinary operations
Secondary Duties and Responsibilities:
+ Promotes the culinary concept in Marketing and Public Relations efforts
Minimum Education and Qualifications:
+ High School Diploma or equivalent
+ Seven years of experience as a Chef in the Pastry department or as an Assistant Pastry Chef in a high volume, hospitality related food and beverage operation
+ Must have a thorough knowledge of cost factors
+ Excellent written and verbal communication skills
+ Excellent organizational and multi-tasking skills
+ Intermediate knowledge of Word, Excel and Outlook
Competencies: Incumbent will master the following competencies while in this position:
+ Ability to produce baked goods and pastries on a large scale
+ Knowledge of Mohegan Sun corporate and department policies and procedures
+ Knowledge of budget planning and analysis process
+ Effective utilization of Mohegan Sun evaluation programs
+ Has a complete working knowledge of the bake shop and all components
+ Knowledge of safe and efficient operation of kitchen equipment
+ Understanding of health and sanitation guidelines
+ Thorough understanding of the Mohegan Tribal Employment Rights Ordinance (TERO) as it relates to employment
Training Requirements:
+ Thorough understanding of P&L evaluation, sales forecasting, budget costs, utilization and Key Volume Indicator analysis
+ Mohegan Sun CER and purchasing procedures
+ Knowledge of Ascent, EmpowerTime and Manager Self Service systems
Physical Demands and Work Environment:
+ Fast paced kitchen environment
+ Must be able to stand for long periods of time with frequent lifting and bending
+ Must be able to lift 50 lbs.
+ Must be able to work various shifts and flexible hours
