Executive Pastry Chef 

About the role: 

This position is responsible for leading the pastry team and production.  They will plan, organize, control and direct the work of employees.  The Executive Pastry Chef will support the Executive Chef and Executive Sous Chef in the day-to-day operation of the Kitchen’s bake/pastry, overseeing all operations including training, quality controls inspection, food safety assurance, and supervising all staff in order to ensure the highest standards of food quality.  

What you will do: 

Responsible for the design, execution, and operation of the pastry offerings of all the outlets 

Provide final authorization for development of and changes to menu items 

Participate in execution of key Marketing, PR, and Social Media Campaigns 

Selects, trains, evaluates, leads, motivates, coaches, and disciplines all employees in the Kitchen’s food production area to ensure that established cultural and core standards are met; long-range strategic planning for outlet operation 

Assists in the planning and development of menus and recipes, ensures the correct preparation and presentation of a consistent level for all food items prepared through production and demonstration, utilizes creative menu planning to minimize waste 

Controls labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory control 

Ensures that sanitation standards as set forth by Four Seasons, local, state, and federal regulations are in compliance as well as the cleanliness and organization of the kitchen 

Maintains control systems, which will assure quality and portion consistency, monitors food shipments to ensure they meet established purchasing specifications as well and fosters an awareness of the importance of food preparation and quality 

Communicates with employees and managers to ensure operational needs are met 

Coordinates menu tastings and pre-meal meetings to educate staff on food taste and preparation methods 

Assists in leading the execution of special culinary events 

Informs and keeps the Executive Chef up to date on problems and irregularities and recommends courses of action 

Has the ability to be visible in the operation, provide recognition, promote good public relations, and handle complaints, concerns or special requests for guests, clients, and group contacts 

Maintains knowledge of competition and industry trends 

Provides knowledge and skill training to team and intern trainees 

Anticipates the needs of guests, responds accordingly to guest inquiries or problems, and recognizes regular guests by utilize the guest’s name consistently 

Remains calm and alert, especially during emergency situations, heavy hotel activity, serving as a role model for the staff and other employees 

Supports the entire Food and Beverage operation, including working in other areas if necessary 

Forecasts workloads and arranges work schedules for the team to adequately cover all shifts 

Provides coverage in case of employee absence and adjusts staffing as necessary to meet business demands 

Observes physical condition of facilities and equipment in the outlet and make recommendations for corrections and improvements as needed 

Listens to requests, responds with appropriate actions, and provides accurate information 

 

What you bring: 

Minimum 8 + years pastry experience required and advanced knowledge of kitchen tools and pastry operations.   

Cooking school or culinary institute education or equivalent experience is required. 

Must have a solid knowledge and understanding of F&B Operations, food & beverage service, cost control, labor control, maintenance, merchandising, and accounting 

Must have strong leadership and interpersonal skills, is able to prioritize and adapt to the changing needs of the operation 

Previous experience creating and designing menu items and wedding cakes required. 

Must have working knowledge of computers and POS systems 

Must be able to lift a minimum of 50 lbs and stand for 8 hours. 

Proactive, energetic, hands-on approach and able to operate autonomously 

Must have a positive attitude with a generous and uplifting team approach 

Fluency in English is required for this location and this job requires applicants to have current work authorization in the in the United States.

Salary Range: $90k - $100k annually

Schedule & Hours: 

This is a full-time position.  

The idea candidate must be willing to work flexible hours and days of the week to support the essential functions of the department and division.
