Director of Food & Beverage

SUMMARY:

Director of Food and Beverage embraces, maintains, and supports Horseshoe’s service culture and core values while leading the Food and Beverage teams.

JOB FUNCTIONS:

Leads Food Service, Culinary and Beverage operations.  Responsible for leading all departmental initiatives related to the casino grand opening including hiring, training, process/procedure development, and product / equipment / supplies acquisition and install.  Establishes a budget for revenues and expenses and operates within those guidelines. Sets operational goals, budgets and business plans, and monitors achievement of performance and profit objectives. Develops short- and long-range plans (revenue, expense, capital, promotional service) in all Food & Beverage areas. Develops strategies and leads initiatives to continuously improve guest service and customer service scores. Sets performance expectations and provides coaching, career development planning and operational support for all direct reports.  Establishes procedures to uphold strict adherence to federal, state and city regulations and internal controls related to departmental processes. Ensures implementation and audit of inventory and cost control systems and procedures. Supports F&B leadership to ensure staff is scheduled properly and aligned with business volumes. Researches, develops, and implements procedures impacting the direction of the food operation. Standardize production recipes to ensure consistent quality Ability to offer culinary instruction and/or demonstrate culinary techniques. Maintains all facilities, equipment and work areas in a sanitary condition and operating as per health codes. Implements established safety policies and procedures. Consistently demonstrate legendary leadership, influence, drive, innovation and commercial awareness.

SUPERVISORY RESPONSIBILITIES:

This position supervises the entire Food & Beverage department.

QUALIFICATIONS:

Bachelor’s degree or equivalent experience 6+ years’ experience in Food and Beverage Operations Must possess strong managerial, coaching and leadership skills Strong gaming, managerial, administrative, and financial acumen skills Demonstrated ability to deal effectively with employees at all levels Strong organizational and analytical skills Ability to handle complex and emotional issues Acts as a role model to other employees and always leads by example  Adheres to all regulatory, company and department policies and procedures Must project professionalism and possess excellent verbal and written communication skills

COMPENSATION & BENEFITS:

$130k to $150k  Bi-Weekly Pay Dates FTO, 401(k), Medical, Dental, Vision, Life & Disability Insurance  Stock Options and Performance Bonus Incentives
