What you will do
Culinary Execution & Innovation:
· Execute hot Peruvian-Nikkei dishes, ensuring consistency in quality, presentation, and authenticity that celebrate the fusion of Japanese and Peruvian flavors, utilizing traditional techniques such as robata grilling, anticuchos, tataki, tempura, and miso-based marinades.
· Prepare and support the preparation of tiraditos, lomo saltado, ají-infused sauces, miso-marinated meats, and nikkei-style rice dishes as an exemple.
· Work with premium ingredients, maintaining a balance between local produce and imported specialty products essential to Nikkei cuisine.
· Maintain knowledge of traditional Peruvian spices, chiles, misos, umami-rich broths, and dashi-infused flavors to enhance menu offerings.
Operational & Team Leadership:
· Support the hot kitchen team, ensuring proper execution of recipes, techniques, and service standards.
· Maintain kitchen efficiency, optimizing workflow, food costs, and inventory management.
· Work closely with the Executive Chef, Chef de Cuisine and restaurant management to align menus with the overall culinary vision.
· Ensure compliance with food safety, sanitation, and hygiene standards.
Guest Experience & Brand Development:
· Engage with guests to educate them on the unique aspects of Peruvian-Nikkei cuisine.
· Assist in special events, tastings, and collaborations to enhance the restaurant’s reputation in the market.
· Stay updated with global culinary trends and integrate modern techniques while respecting the roots of Nikkei cuisine.
What you bring
Qualifications & Skills:
· Proven experience (5+ years) in high-end Peruvian, Nikkei, or Japanese-Peruvian fusion restaurants.
· Strong knowledge of hot Peruvian and Nikkei techniques, including wok cooking, grilling, and miso-based marinades.
· Ability to balance bold Peruvian flavors with delicate Japanese umami elements.
· Experience in menu development, cost control, and kitchen operations.
· Leadership skills with a passion for training and mentoring a diverse team.
· Ability to work under pressure in a fast-paced, high-volume kitchen.
· Fluent in English and Spanish preferred.
