About the role

Key Responsibilities:

Guest Interaction & Service Excellence:
•    Engage with guests, providing knowledgeable recommendations about Peruvian-Nikkei dishes.
•    Take guest orders accurately and input them into the POS system.
•    Ensure a warm, professional, and personalized guest experience while explaining ingredients, techniques, and flavors.

Culinary Execution & Consistency:
•    Prepare and execute Peruvian-Nikkei cold dishes, including tiraditos, ceviches, causas, and cold seafood preparations, following standardized recipes.
•    Maintain flavor consistency, precise plating, and high-end presentation to meet 5-star luxury standards.
•    Ensure correct portioning, balance of flavors, and textural contrast in cold dishes.
•    Work with premium seafood and ingredients, following proper handling and safety standards.

What you will do

Operations & Kitchen Standards:
•    Accurately punch orders into the POS system and coordinate efficiently with the kitchen team.
•    Maintain a clean, organized, and hygienic work area in compliance with food safety regulations.
•    Ensure proper storage, labeling, and handling of raw seafood, citrus-based marinades, and Nikkei condiments.
•    Work collaboratively with chefs and service staff to provide a seamless guest experience.
•    Follow hotel service standards, ensuring efficiency and professionalism at all times.

What you bring

Qualifications & Skills:
•    2+ years of experience in a high-end Peruvian, Nikkei, or Japanese fusion restaurant.
•    Strong knowledge of cold seafood handling, ceviche, tiradito preparation, and Nikkei flavor profiles.
•    Experience in guest interaction, taking orders, and using a POS system.
•    Ability to work under pressure in a fast-paced, luxury hotel environment.
•    Strong attention to detail, plating precision, and consistency in execution.
•    Excellent communication skills in English (Spanish is a plus).
•    Passion for hospitality and creating memorable guest experiences.

This position requires an applicant with a flexible schedule and the ability to work all shifts, weekends and holidays.
