A Commis 1 (Mezzerie – All Day Dining restaurant) is responsible for leading food preparation and maintaining the highest standards of hygiene, efficiency, and quality in a luxury all-day dining restaurant. A Commis 1 is expected to take full ownership of their assigned section, ensuring consistency in food production while assisting the Demi Chef De Partie in executing high-quality dishes.

What will I be doing

This position is essential in delivering a seamless and exceptional dining experience for our guests, contributing to the overall success of the All Day Dining Restaurant service.

\n

Specifically, you will be responsible for performing the following tasks to the highest standards:

\n\nPrepare and present high-quality dishes within company guideline.\nAssist in preparing and cooking dishes according to hotel standards and guest preferences within company guideline.\nEnsure consistency in taste, quality, and presentation of all menu items.\nSupport in the preparation and mise en place of ingredients, ensuring all ingredients are fresh ready before service.\nFollow standard recipes and guidelines to prepare meals while maintaining consistency and quality.\nCook and present dishes with precision, ensuring they meet the established culinary standards.\nWork closely with Commis 2, Commis 3, and other culinary team members to ensure timely and efficient service.\nChecks and controls the proper storage of product, monitoring age and condition of all food items to rotate and maintain highest quality.\nKeeps all refrigeration equipment, storage and working areas clean and clutter free, complying with Health department regulations.\nPrepares daily requisitions for supplies and food items for production.\nReads and employs math skills to follow recipes.\nPrepares daily requisitions for supplies and food items for production\nSupport stock management, storage, and inventory control with attention to detail.\nVisually inspects, selects and uses only food items ideal for cooking, in preparation of all menu items. \n

A Commis 1 (Mezzerie – All Day Dining restaurant) serving Waldorf Astoria Hotels and Resorts are always working on behalf of our Guests and working with other Team Members. To successfully fill this role, you should maintain the attitude, behaviours, skills, and values that follow:

\n\nPrevious experience as a Commis 1 (All Day Dining Restaurant) in a high-end all day dining restaurant, luxury resort, or fine dining restaurant.\nStrong knowledge of Western, Arabic, and international cuisine.\nAbility to work in a fast-paced, outdoor kitchen environment.\nPassion for food and creativity in presentation.\nStrong understanding of food safety and hygiene regulations.\nExcellent teamwork and communication skills.\nFlexibility to work shifts, weekends, and holidays as required.\nKnowledge of operating all kitchen equipment, i.e., stoves, ovens, broilers, steamers, kettles, etc.\nBasic mathematical skills necessary to understand recipes, measurements, requisition amounts and portion sizes.\nAbility to read, write, speak and understand the English language in order to complete requisitions read recipes and communicates with other team members.\nAbility to grasp, lift and/or carry, or otherwise, move goods weighing a maximum of 100 lbs. on continuous schedule.\nAbility to stand and to work continuously in confined spaces.\nAbility to perform duties within extreme temperature ranges.\n\n
