Chef De Cuisine - Bistro / Mediterranean

As Chef de Cuisine at Waldorf Astoria Seychelles Platte Island, you will lead the culinary operations of one of our signature dining outlets, ensuring the highest standards of food quality, creativity, hygiene, and guest satisfaction. You will work closely with the Executive Chef and other department leaders to deliver a world-class dining experience that reflects the luxury and elegance synonymous with the Waldorf Astoria brand.

\nKey Responsibilities:\n\n\n

Oversee daily kitchen operations for the assigned outlet, including preparation, production, and service of food items.

\n\n\n

Lead, train, and inspire the kitchen brigade, fostering a positive and productive working environment.

\n\n\n

Create innovative menus and signature dishes that reflect seasonal ingredients and local influences while maintaining brand standards.

\n\n\n

Monitor and ensure the consistency and quality of food presentation and taste across all service periods.

\n\n\n

Ensure compliance with food safety, sanitation, and hygiene regulations in accordance with HACCP standards.

\n\n\n

Manage food cost, inventory, and wastage, working with the Cost Controller and Procurement to ensure efficient use of resources.

\n\n\n

Collaborate with other chefs, outlet managers, and service teams to create seamless guest experiences.

\n\n\n

Handle guest feedback promptly and professionally, maintaining high levels of satisfaction.

\n\n\n

Assist the Executive Chef in administrative duties such as scheduling, performance management, and departmental meetings.

\n\n\n

Stay updated with culinary trends and incorporate relevant ideas into the menu and guest offerings.

\n\n\nQualifications & Experience:\n\n\n

Proven experience as a Sous Chef or Chef de Cuisine in a luxury hotel or fine-dining environment.

\n\n\n

Formal culinary training and certifications from an accredited institution.

\n\n\n

Deep understanding of modern cooking techniques, international cuisines, and fine dining service.

\n\n\n

Strong leadership, communication, and interpersonal skills.

\n\n\n

Proficiency in kitchen management software and basic computer applications (MS Office).

\n\n\n

HACCP and Food Safety certification is essential.
