Excellence - We always strive to make today a little better than yesterday. JOB DESCRIPTION We are looking for a leader that is passionate about the culinary arts to join our team as Chef de Cuisine. This individual must have extensive experience working in a high-volume professional kitchen. This individual must be a creative and motivated hands-on leader in the kitchen. Successful candidates for this role will have a proven track record of work with creative menus which reflect seasonal availability, exceptional standards as it pertains to cleanliness and food safety, respond in a professional and courteous manner to all guests and team members, and enjoy being a teacher of the culinary arts. The Chef de Cuisine will assist with planning and execution of the daily production, preparation, and presentation of all food in the high-end Outlets of the hotel - Brazos Proper Texas Kitchen, Block T Bar & Grill, and Junction Cafe. They will conform to all safety and sanitary standards while achieving profitable, competitive quality products. COMPENSATION & BENEFITS: Salary starting at $80,000 with additional commensurate with experience; paid biweekly Extensive health benefits, paid time off, retirement, tuition reimbursement, and employee discounts at hundreds of US and international properties. SCHEDULE: The hospitality industry is 24 hours a day, seven days a week, and 365 days of the year. All candidates must be available and are expected to work Texas A&M football game days, Ring Days, graduations, and other high occupancy times due to special events. We strive hard to manage and minimize overtime, but it should and will be expected when business levels call for it. Full-time, 40-50 hours per week Days of week/weekend scheduled, as well as shift times, will vary depending on level of business forecast. JOB DUTIES: Assist the Executive Chef in the creation, plating presentation, and implementation of seasonal and special menu items for a world-class dining experience. Assist the Executive Chef in costing and development of recipe cards for the seasonal menus & special menus in each Outlet's menu. Create new recipes and regularly update recipe cards and costs. Keeping track of and utilizing new industry trends as it pertains to each Outlet's concepts. Respectfully collaborate with leaders and teams outside of the culinary department in a professional, courteous manner, to develop and execute daily service, catered functions, and special events. Attract, train, and lead the development of culinary talent. Act in the absence of the Executive Chef to complete the daily ordering using the current par levels for all outlets, the employee cafeteria, and banquets. Assist the team when needed with any function within the culinary department (cook, steward, etc.). Conduct daily walk throughs of the kitchen, make recommendations for corrections, repairs, cleanliness concerns, and improvements if needed. Conduct daily meetings with the team to ensure their preparation; efficiently communicate all pertinent information. Attend applicable meetings as a supervisory representative of the culinary team. Manage the finances of the department, analyze and control costs, and oversee the budget to achieve a profitable operation. Have a full knowledge of food allergens and handle any guest with food allergies with a high sense of urgency. Work with the culinary team to ensure prep sheets are updated and being properly used daily. Guide the nightly cleaning of all kitchen areas and follow up with the PM stewarding crew to ensure the dish area is clean and organized for the next day’s service. Qualifications Degree or formal training in a field related to culinary arts. Familiarity with basic and advanced cooking methods; ability to train others on those methods. 5+ years’ experience as a Restaurant Chef or Chef de Cuisine in a high-volume, professional kitchen; with Upscale/Fine Dining experience. Passion for creating incredible food that delights and attracts guests. Exceptional standards for cleanliness, health and safety. Knowledge of Texas style smoked meats and plant-based food preparation preferred. Full knowledge of food allergens and full knowledge of correct cooking temperatures of all vegetables and proteins. Ability to provide cutting tools needed to perform job as well as a calibrated food grade thermometer. Full capabilities in organization and multi-tasking of the culinary department. Full knowledge of the state’s health codes, eco sure food safety and health report, and an active Food Handler’s Certification. Demonstrate and lead team with strong communication and organizational skills. Ability to work independently. Ability to thrive in a high-pressure environment. Ability to be on your feet for long periods of time and lift at least 50 pounds. At least 21 years of age
