Role Overview: The Assistant Director of Food Service Compliance conducts regular audits, ensures compliance with health and safety standards, and works closely with the Indiana Department of Correction (IDOC) food service vendor. This role involves regular reporting, meeting with our food service vendor monthly to ensure contract compliance and conducting inspections as needed. Ideal candidates have significant experience in food service management, auditing, and knowledge of health department standards. Strong customer service skills and the ability to manage a small team is essential. This position requires extensive travel to correctional facilities across the state. Responsbilites: The essential responsibilities of this role may involve each of the following: + The Assistant Director works independently following executive orders, statutes, rules, regulations, and accepted guidelines. + The Assistant Director can make recommendations for changes to existing programs which usually will influence agency operations. + The Assistant Director possesses sufficient technical knowledge and authority for the work. Decisions and major recommendations are reviewed for compliance with agency policy and attainment of goals. + The Assistant Director makes a major contribution in the development and implementation of significant programs. The consequence of errors is considerable, basically directed toward adverse effects on the agency and programs. + The Assistant Director will review nutritional policies, procedures, menus, American Correctional Association and dietary guidelines for the agency. + Review nutrition policies, procedures and menus semi-annually to ensure compliance with the National School Breakfast and Lunch programs as established by the USDA and regulated by the Indian Department of Education. + Responds to questions and concerns from the field relating to menu issues, menu substitutions, diet orders and nutrition issues: + Provides technical and evidence-based guidance to health services staff, wardens and other facility staff on food and nutrition related services as needed and/or requested: + Responds to incarcerated individuals’ correspondence and grievances regarding diets and menus: + Develop systems for nutrition consultation and staff communication between the Dietitian, Food Service Staff and Health Services Staff: + Provide guidance, support and training to all compliance staff as needed to ensure program success while completing operational audits: + Completes annual site visits in conjunction with the contractor’s dietitian to review and track incarcerated individuals with non-standard therapeutic diets and nutrition consults: + Conducts plate waste study to determine amount and type of food waste to improve menu options and consider incarcerated individuals’ preferences: + Works in conjunction with the contractor’s dietitian to develop the seasonal menus taking into consideration menu options and incarcerated individuals’ preferences: + Conducts semi-annual interviews with incarcerated individuals for feedback on menu items and nutrition education: + Works in conjunction with Health Services staff and contractor’s dietitian to evaluate labs results of dialysis patients to determine the effectiveness of the renal diets and need for patient consultation: + Participates as a member of the multidisciplinary team meetings as assigned or needed at the facility level: + Develop a tracking system involving hunger strike individuals to ensure both foodservices and medical response is appropriate based on the status of the hunger strike: + Completes quarterly food service audits in rotation with the rest of the food service compliance team: + Trains the compliance team, contract staff and incarcerated workers and acts as the proctor when administering certification exams meeting state regulations for food service handlers when needed. Salary Statement: The salary for this position traditionally starts at $75,010.00 but may be commensurate with education or work experience. A Day in the Life: The essential functions of this role are as follows: + Review and evaluate organizational effectiveness, goal determination, and strategic planning, etc., makes recommendations for improvement. + Develop and coordinates plans and policies, resources, and mission as well as goals, vision and expectations of agency or program. + Reviews and verifies the menus submitted by the contractor’s dietitian to develop and revise semi-annually the master menu for the various populations. + Analyzes menus and recipes to ensure the various menus meet the contracted nutritional requirements as stipulated in the foodservice’s contract. + Develop and write technical equipment specifications ensuring proper application, utility supply, installation and volume capacity for the population intended. + Analyzes flow of food to ensure operational efficiency and correct production capacity for the various facilities based on their capacities. + Provide guidance to agencies and the public regarding applicable laws and rules. + Supervise subordinate personnel including hiring, determining workload, and authorizing assignments, training, monitoring, and evaluating performance, and initiating corrective or disciplinary action. + Assist with monitoring agency or program budget including revenues, expenditures, and budget projections. Communicate with news and other media and respond to media questions or requests in an appropriate public relations manner. + Coordinate with other government officials on planning issues. + Recruit, select, onboard, and train employees to ensure role responsibilities and expectations are clearly understood while providing opportunities to continue professional development. + Set expectation, measure progress, provide ongoing feedback, and evaluate the performance of employees. Ensure work adheres to quality standards, deadlines, and proper procedures.
